How “It’s” (the Diet’s) Going

I’ve been sticking to my modified (for thyroid issues) paleo diet for 4 days now.  I’m logging my food intake here, in case anyone is interested.

I have to say… it’s going well.  VERY well!

When I started this, I almost cried.  We went to Who.le Foo.ds to buy “essentials” and came out of the store with very little because, well, there isn’t much on the list of foods I can eat.  I am limited to most veggies, natural meats, and some fruits.  When we lived the paleo lifestyle last summer, we did allow ourselves to have dairy as long as it was “whole” dairy and nothing processed beyond minimal federal requirements.  This time around, I have cut the dairy.  Completely.  This is by far the hardest part for me.  This part of the diet almost made me cry as I walked out of Who.le Foo.ds with my bags full of… super whole foods!  The milk in my cart was for Matthew.

Going grains-free is not really an issue for me.  Sure, I tend to bulk up on them before starting down the paleo/modified-paleo route, but I can see myself living almost grain-free for the bulk of my life if I would just set my mind to it.  Not eating grains over the last 4 days has been no big deal, aside from the fact that everything “easy” includes grains (pizza, sandwiches, Mexican food).  Once I got past the first day of this, my definition of “easy” went out the window and I came up with easy ways to get calories without needing grains to put them on, essentially.

So how am I making this work?  When I started out on this, I was very concerned that I wouldn’t be able to get creative enough to get all of my required calories in for being a 20-week pregnant gal.  The first day, I failed miserably.  The second day, with B’s help, I almost hit my target and I was thrilled.

The key to this is high-calorie items like meats, avocados, and coconut milk.  I eat grass-fed, all-natural, nitrite-free meat sticks every day in the form of beef, turkey, and salmon (sounds gross, but is wonderful).  We order these, and most other meats, from Wallace Farms and they deliver them to whichever pickup location I select within our area (they deliver to Naperville as well).  Coconut milk has been my saving grace – I pour it over my berries at night and, well, it makes me happy!  I had tried coconut milk yogurt which was OK, but B suggested I put straight coconut milk on my berries and that was the best suggestion ever!  Coconut milk is way cheaper than coconut yogurt, and it’s actually better.  I love it!  We also use it to make mashed cauliflower which is awesome!

How am I feeling?  I feel pretty darned good.  I have a lingering headache which I believe is from caffeine withdrawal.  Besides that, I just feel better and way less bloated.  I was having a lot of stomach pain before I started this and that has all disappeared.  I am still not perfect in the GI area, but it’s getting better and I have to believe that that will improve over time.  I was rather swollen in my legs and face and that has all gone away.  I am stuffier, which I wasn’t expecting having given up dairy, so I think it must be a cold.  Interestingly, but not surprisingly, I have dropped 4.2 pounds in 3 full days of this.  I know that that is not a goal, but I was gaining weight at record speed during this pregnancy and even though my doctor didn’t seem too concerned, they did say that there’s no reason for me to be putting on the weight I was.  It was time for a change – I don’t want to gain 50 pounds while pregnant!  I am now down to “normal” pregnancy weight gain for being 20 weeks pregnant, and feeling way better.  I was just retaining water like a crazy woman!  I noticed on our scale that my water % was going up at the same rate as weight, telling me it was severe water retention.  That number is now back down to my normal levels.

We went out for dinner last night to one of my favorite places of all time.  I think I’ve written about it before – it’s called the Flying Mango.  They have the most incredible smoked brisket on the planet – I am not kidding you.  Their entire menu is rather paleo-friendly, which makes it special to us – but beyond that, it’s just a great place to go!  It’s one of the few restaurant gems we have in DSM, land of the chain restaurants.  😉   I got my brisket and trimmed off all of the fat, got a mashed sweet potato cake, and steamed zucchini and brussels sprouts.  It was divine, and I only missed their decadent corn bread a little.  I didn’t even put BBQ sauce on my meat – I ate it plain Jane and it was perfect!

If I can go to my favorite restaurant and not slip up, I feel like this is more than do-able for the long term.  I do plan on re-introducing whole dairy after the initial 30 days are up, but only in the form of cheese (I miss Chip.ot.le a lot!).  I don’t see myself eating many grains in my future, except on my birthday!  I already told B that there must be an orange mimosa cake waiting for me on St. Patricks Day!

Time for a SERIOUS Change in the Food Department

My thyroid is out of whack, and my body just feels like shit.  So my family has decided to put our money where our mouth is and do the Whole.30 diet/lifestyle for, you guessed it, 30 days.  This lifestyle is restrictive, y’all, and I will likely be very grumpy for the next 30 days.  But I’m doing it because I need to make a change.  Matthew is starting to want to eat what we eat, and I eat like shit.  How can I tell him he can’t have tortillla chips (or worse, French fries) when I’m munching away on them?  It’s rude.  It’s appalling.  It needs to stop.

Tomorrow, on February 7, 2013, I will be starting the Whole.30 lifestyle.

Today, I go out with a bang.

To hold myself accountable, I will do my best to log every.single.item that crosses my lips on a daily basis.  Goodbye grains, dairy, soda (sniff sniff), sugar, etc.  Hello (again – because we have done this before and very successfully, I might add!) natural meats, veggies, and limited fruits (good thing I LOVE berries!).

Because of my never-ending thyroid issues (and they’re not that bad, but they refuse to stabilize with medication), we are taking this a bit further with also eliminating eggs and some spices (the other things they tell you to limit for autoimmune conditions are on my “do not like” list anyway) as well as nuts, seeds, and pineapple.

This is a needed change.  It is time.  It’s time for things to be working again within my body.

The Monday Snapshot – Booster Launch!

We had no food for dinner in the house tonight (how is that possible after a trip to Wh.ole Fo.ods yesterday?) and B welcomed me up from my nap with an announcement:  “Let’s have an early dinner – I’m starving.  The grocery store buffet (which is honestly quite good!) or Micky’s?”  This was music to my ears as we hadn’t left the house all day.  We had freezing ran the first half of the day and it just felt good to stay in.  But it was time to get out.

All of us were in our “stay at home” clothes but we did not care.  We packed up some fruit for Matthew, loaded ourselves into the car, and headed to dinner.  This place is awesome for families – super good food (for bar food) and lots of room for Matthew to stretch his legs.  BUT – they only have two low tables that accommodate high chairs and when we got there, a large party had put them both together.  HMMMMM…. what to do?  We decided to try out the booster chair for the FIRST time.

We ditched the booster rather quickly and just let him sit on the bench with us, but it was fun to try and honestly, dinner went really well.  Matthew ate more than he’s eaten while out to dinner in a long time (an entire large chicken breast, three thick tomato slices, a lot of cottage cheese, and some fruit).  I wonder if the freedom made him more interested in coming back to eat his meal?  Who knows, but it was great!

Bedhead

Matthew had a rough nap today, as evidenced by his hair when he woke up.  😉  Seriously, this boy’s hair lays so perfect most of the time, and he has NEVER had “bedhead.”  I have expected him to have some difficult hair every once in a while given the fact that we keep his hair pretty short and trimmed, and he has a LOT of it.  Matthew’s hair is THICK.

I thought he looked so cute with his “bedhead” today, that I didn’t even try to fix it.  He looked like a bona-fide little boy, rather than a toddler.  A little surreal, but sweet!  We took him out to the mall and to dinner with his sloppy hairdo, and I loved it!  I finally took a photo at dinner because it was still standing on end.  HA!

One of these days, I’ll get around to writing a real post – you know – one with substance?  We’ve had a rough week that started out with a poor decision on my part to take Matthew to his favorite lunch spot (Chipo.tle) and get him mild salsa with peppers, along with his favorite guac in the whole wide world.  I will never get him that salsa again – the guac is fine and he can handle that, but that alone.  That stupid salsa set him, and his naps, back for two damned days.  We were both crying in the afternoon after a short, 45 minute nap.  The next day was not much better – a 1.5 hour nap and tears as he woke up again.  Geesh!  I’m happy to report that yesterday was blessed with a BEAUTIFUL 2.6 hour nap and the last two nights, he’s slept well over 11 hours.  My sanity has returned.

Now, if we could just get him to eat something besides fruit, eggs, and string cheese (and Chipot.le, of course) – life would be back to “normal!”

Another List!

Life has been great lately – I feel like things are really going smoothly for me.  My reasons for feeling this way are extremely ridiculous – but I can’t help but feel energized by them:

  1. After months, and MONTHS, of trying to find replacement hair products for my secret weapon product that the manufacturer discontinued (without asking my permission) – I have found them!  I have spent a fortune on multiple products that are sworn to do the same thing as my discontinued product, but none of them do.  All they do is dry out my very fine, flat hair.  I went to Ave.da yesterday to pick up some moisturizer and asked the gal if she had ideas for me (I asked a different gal a month or so ago and she told me I was out of luck).  This gal sold me two things (ugh) and told me precisely what to do with them.  I followed her instructions today and my hair has never looked better – and with half the work I was doing before (no more flat iron!).  HUGE win!
  2. I got new slippers.  I have had the same pair of Ac.orn slippers for a couple of years and although they’re still comfy, they were missing that “walking on clouds” feeling that comes with a new pair of faux fur-lined Ac.orn slipers.  I was at the mall yesterday, on my way out through my favorite outdoor gear store, and thought, “oh – my slippers!”  They had my size, they were on sale – and they were mine!  They’re the wrong color (black = yuck) but I do.not.care.  My feet are warm and comfy (I’m wearing them in bed right now – even though they have soles on them.  HA!).
  3. Maternity clothes.  No – not because of the fit and comfort (but yeah, that too), but because I get to wear my wonderful be.maternity stretchy shirts (from Targ.et) under everything, which means in these winter months, I am sealed up from head to toe now and I’m not cold everywhere I go.  So happy!
  4. Maternity jeans at Ga.p Maternity were $35 a pair at their retail locations.  I needed new ones and stocked up.  I’m so happy!  I couldn’t have gotten them cheaper at cheap maternity stores.  To put the cherry on my sundae, they are the same size as the jeans I bought at Ga.p this past summer when I was smaller than I am now (pre-IVF meds) – so that was nice!
  5. Matthew is sleeping longer these days.  YAY!  We planned our work and worked our plan and we have success!  He slept 11 hours last night and 10.5 the night before.  He is waking up  happy versus crying.  I am sleeping more too which is nice!
  6. We are going to bed WAY earlier than normal.  At 10:00 tonight, I asked B, “ready for bed?”  A week ago, I would not have asked that so early but we’ve been going to bed before 11 each night for a week now and I’m just a lot happier.  Yes, I can function on very little sleep, but more sleep is always better!
  7. My diabetic cat is in a diabetic remission.  Don’t tell the others, but she’s my fave and when she’s sick, I get very sad.  Her behavior was off for a couple of weeks so I decided to get out the glucometer and test her.  Turns out we were giving her too much insulin because she’s in remission.  Since chatting with the vet and dropping the shots for over a week, she’s back to normal and happy.  I’m happy too!  This won’t last forever, and I have to watch her closely – but that’s never been a problem for me.  She and I are almost inseparable (but she was not hanging out with me while being OD’d with insulin which tipped me off).
  8. Matthew is back to eating almost everything we put in front of him.  There isn’t much he won’t eat.  He even loves scallops.  This has made life way easier because he eats what we eat every  night for dinner.  It’s awesome!
  9. I have an old doll from my childhood that we keep in Matthew’s closet.  She looks like a real baby (she’s a hospital mannequin – don’t ask!) and we got her out a couple of years ago to teach B how to diaper a baby.  We just kept her in the closet for whatever reason.  Matthew has found her and now asks, at least once a day, for the baby to come out.  He treats her like a real baby and is very gentle and loving, and tries to hold her like a baby (she weighs 5 pounds so that makes it hard for him).   He was hesitant at first, even though he wanted her out of the closet, and just wanted to look at her.  He now pats her head, touches her nose, kisses her, and strokes her while I hold her.  This makes me think to our future with a big brother and it melts my heart!
  10. I have less than a week’s worth of shots left.  I have 6 left starting tomorrow.  Ahhh… this is so exciting!

 

So there it is – the list that convinces me that things are pretty good right now!  I’m sure things will change tomorrow, now  😉

Finally!!!!

Matthew only falls asleep in his crib, in my arms, or in his car seat. He’s never fallen asleep on the floor playing, in a jumper, etc. Heck, he won’t even fall asleep in his stroller anymore and hasn’t since he was 10 months old.

But this happened today… And it was as precious as I always imagined it would be! Like Matthew himself, this moment was worth the wait!

Thank you Steph (and Baby Whisperer)

I owe a major shout-out to Stephanie.  I posted my Monday Snapshot of Matthew melting down over food and she commented with some advice from a professional baby whisperer.

The advice?

“She said that as kids start to get more independence, we hover a little too much and don’t give them choices as they are eating.  She suggested putting each type of food you give him in little measuring cups or small containers and letting HIM choose.  I know you pretty much already do that by putting it on his tray, but maybe there is something to them looking in the cup and feeling like they are making more of a choice?”

I tried that advice today, and it effing worked!  I loaded up chicken, marinated mushrooms and artichoke hearts, and an heirloom tomato into their own bowls and this is what happened:

The Monday Snapshot – Getting Picky

Matthew has been on a bit of a food strike for a few days.  He eats… soups, avocados, yogurt, cottage cheese, hard cheeses, and fruit.   That’s it right now.  He will dabble in meats and an occassional veggie, but he’s really just holding out for Mom’s soup and his “dessert” of fresh fruit.

Sigh.

I so hope his fabulous eating skills come back.  Careful what you wish for, right?
